In a food-processing plant, “sanitary” is a fabrication standard, not just a material choice. Stainless steel provides the corrosion resistance, but the details decide whether equipment can actually be cleaned: continuous welds instead of stitch welds, smooth blended finishes instead of rough beads, and geometry that drains instead of trapping product and washdown water.

Why is stainless steel the default for food equipment?

Because it survives the cleaning that food safety demands—hot water, caustics, and sanitizers, applied daily—without shedding coatings or rusting into the product zone. Grade selection between 304 and 316 depends on chemical exposure; our 304 vs. 316 comparison covers that decision.

What makes a weld “sanitary”?

Continuous, crevice-free, and cleanable. Skip welds and open lap joints create harborage points that washdown cannot reach—exactly where bacteria persist. On product-zone equipment, welds are made continuous and finished smooth so surfaces rinse clean. This is careful TIG work, and it is a large share of the stainless fabrication we do for Wisconsin food plants.

How do surface finishes affect cleanability?

Rough surfaces hold soil; smoother surfaces release it. Product-contact surfaces are typically finished and blended so cleaning chemistry can do its job. Finish requirements belong on the drawing for every product-zone surface—stated, not assumed.

What does “designed to drain” mean in practice?

No flat ledges that pond water, no dead-end cavities, sloped surfaces where liquid collects, and frames built so washdown runs off rather than pooling inside tube ends or channels. Drainability is decided at design time—a fabricator experienced in food-plant work will flag traps on a drawing before they are welded into permanence.

Does structural support steel need the same treatment?

Not always to the same level—but frames and stands in washdown areas still benefit from sealed tube ends, minimized horizontal ledges, and stainless or properly finished surfaces. Splashing a carbon frame into a washdown zone is a maintenance bill on a schedule.

What should a food plant include in a fabrication RFQ?

The product-zone boundaries, finish requirements, washdown chemistry, and any customer or auditor standards that apply. With those defined, a shop can quote accurately—our RFQ checklist covers the rest of the package.

How should frames and legs be detailed for washdown zones?

Closed and sealed. Open tube ends collect water and product; seal-welded caps eliminate the cavity. Horizontal ledges pond washdown; sloped or round members shed it. Feet should allow cleaning underneath or seal to the floor—the gap that a hose cannot reach is the gap an auditor will find. These are inexpensive details at fabrication time and expensive regrets afterward.

What do sanitation audits actually look for on equipment?

Places soil can hide and cleaning cannot reach: crevices, stitch welds, open laps, threads in product zones, ponding surfaces, and damaged finishes. Fabrication quality determines most of that list before the equipment ever runs product. Building to cleanable details the first time is dramatically cheaper than reworking equipment after a finding.

How does layout affect cleanability?

Access is a fabrication issue too: equipment set too close to walls or floors cannot be cleaned behind or under, whatever its own finish quality. Stand heights, removable guards, and tool-free access panels decide whether the sanitation crew can actually do the job the design assumes. It is worth a conversation with the fabricator when stands and guards are being detailed.
